Sausages with White Beans & Apples

This fall-favourite comes together in under 30 minutes, and the whole family will enjoy it. Choose your favourite sausage flavour and feel free to substitute greens for the apples, once the seasons turn. Enjoy!

SERVES 4

INGREDIENTS

  • 3 tablespoons Olive oil

  • 4 Sausages (Your preference of flavour!)

  • 3 Apples, cored and sliced 1/4” thick

  • 1 small Onion, sliced

  • 2 cloves Garlic, sliced

  • Sea salt

  • 1 cup Beer (Lager or ale, or you can use Chicken Stock or Apple Cider as alternatives)

  • 1 jar or 2 14-oz cans White Beans

  • Loaf of nice Sourdough Bread

METHOD

Heat 1 tablespoon of olive oil over medium heat in a large oven-proof skillet or Dutch oven. Sear the sausages until golden brown, about 3-4 minutes on each side. Remove the sausages from the pan and set aside.

Add another 2 tablespoons of olive oil into the pan. Add the apples, onion, and garlic and sautée until the onion is soft and translucent. Season with sea salt, then add the beer, reducing it for 30 seconds.

Add in the drained white beans, and nestle the sausages into the bed of beans and apples. Cover and bake for 20 minutes, until the sausages are cooked through.

Scoop up this delicious fall stew (and its juices) with some nice crusty sourdough bread!
